Parkin

The ingredients:
  • 200 g plain flour
  • 100 g oatmeal
  • 150 g baking margerine (Stork for fluffly cakes)
  • 100 g black treace
  • 100 g golden syrup
  • 100 g light brown sugar (e.g. muscavado)
  • 6 g baking powder
  • 40 g ground ginger
  • 2 tsp mixed spice
  • 100 ml milk (or 30 ml condensed milk 70 ml water)
  • 1 medium egg
Equipment
  • Fan assisted oven
  • Large mixing bowl
  • Weighing scales
  • Baking tray or pyrex dish
  • Spoon
Procedure:
  1. Heat fan assisted oven to 423 K.
  2. Mix ingedients in mixing bowl.
  3. Place in tray or dish in preheated oven for 3000 seconds.
  4. Take from oven and divide into portions
