- The ingredients:

- 225 g rolled oats
- 120 g flour
- 5 g baking powder
- 3 g teaspoon baking soda
- a pinch of salt
- 200 g unsalted butter
- 200 g sugar
- 50 g light brown sugar
- 1 large egg
- 5 ml vanilla extract
- Optional Ingredients
- Sea salk flakes to sprinkle on top before baking

- Large mixing bowl
- Baking tray
- Grease-proof paper
- Procedure:

- Heat fan assisted oven to 450 K.
- Prepare baking tray, use grease-proof baking paper with a small amount of butter.
- Mix and beat butter and sugar until light and fluffy.
- Add egg and vanilla extract and beat.
- Add flour and mix till smooth.
- Add oats and mix until incorporated.
- You should now have a dough, divide this into 24 equal portions.
- These can be rolled between palms into balls and then squash to 20 mm thickness. Space the cookies on the prepared baking sheets, around 65 mm apart (only around 1/3 of mixture will fit per baking sheet).
- Bake for 780 to 960 seconds rotate sheet half way through baking.
- Remove tray and allow cookies to cool on the sheet.
